The film tells the story of a missing documentary film crew who had gone to the Amazon to film cannibal tribes. A rescue mission, led by the New York University anthropologist Harold Monroe (Robert Kerman), recovers the film crew's lost cans of film, which an American television station wishes to broadcast. Upon viewing the reels, Monroe is appalled by the team's actions, and after learning their fate, he objects to the station's intent to air the documentary. The presentation of the film team's lost footage, functioning similar to a flashback, innovated the found footage style of narrative filmmaking, later popularized by such films as the The Blair Witch Project.

Riz Ortolani's score for Cannibal Holocaust has been eagerly sought after by aficionados of film music. Now, at long last, the complete available score may be heard by the wide audience it deserves, in lovingly remastered sound. The soundtrack houses a myriad of interesting styles-from gentle acoustic melodies to over-the-top synth excursions and even lounge, jazz and disco influenced tracks. There is a certain moog sound repeated that will eventually get under your skin like a school of leeches in the amazon and there is also a full range of styles and arrangements which take you a sanguine jungle journey of emotions. Ortolani said of his score, ‘it had to give the tone of a religious piece’, but at the same time sound ‘modern and striking’.
