Angel Hair with Feta and Sun-Dried Tomatoes
1 (16 ounce) package angel hair pasta
1 (8 ounce) package tomato basil feta cheese, crumbled. If you can find it. If not improvise
1 cup grated Parmesan cheese
3 ounces sun-dried tomatoes, softened and chopped
ΒΌ cup olive oil
4 cloves garlic, crushed
1 bunch fresh cilantro, chopped Or use fresh basil
salt and pepper to taste
Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain and return pasta to the pot.
Mix Parmesan cheese, tomatoes, olive oil, and garlic into pasta. Stir in cilantro; season with salt and pepper. Serve warm.
