Baked feta potatoes
600 g
new potatoes
4 tbsp.
olive oil
1 tsp.
dried thyme
1 tsp.
dried oregano
4
garlic cloves
1/2 tsp.
salt
1
red onion, roughly chopped
300 g
cherry tomatoes
200 g
block of feta
10 g
flat leaf parsley
Directions
Preheat oven to 220°C (200°C Fan).
Add the potatoes to a large baking tray along with two tablespoons of oil, salt, thyme, oregano and garlic. Stir until everything is nicely coated then roast for 20 minutes.
Remove from oven, give everything a shake and add the red onion and tomatoes. Stir through until they are coated in the herby oil then make room in the centre for your feta. Add to the middle of the tray then return to the oven for a further 20 minutes.
When you’re ready to serve, use a fork to mash the feta and tomatoes and stir through the potatoes. The skins of the garlic will peel off and the centres will be nice and jammy. Finish with parsley and enjoy.
